To be honest I've never had a potato roll here, but at Shake Shack in New York City and a couple of places in Maine they use them, and they're incredible. I was told it would take 18 mins and wasn't given a choice, it was cooked to medium - in hindsight I should have asked for medium rare. <br /><br />This potato roll business is intruiging - where did you have that? I think the top of the bun is slightly too large and the bottom is a little too small (it basically wasn't there at the end due to soaking up all the juices...). The bun is passable, but yeah I'd prefer a smaller potato roll to be honest.
